  • Notes: Agaricus bisporus var. hortensis is the brown form of the common button mushroom, sold as Swiss brown. The familiar white button is the same species, an albino sport selected from brown stock in the 1920s, which is why the brown is the hardier of the two. Brown strains are noticeably more vigorous. The mycelium runs with more strength through compost, copes better with small swings in temperature and humidity, and is a little more forgiving of casing and watering mistakes. Only a little, though. This is still an advanced culture. Most beginners who fail with Agaricus do so because the species needs properly composted substrate and a casing layer, a genuine step up from the sterilised grain and bulk substrate method used for oysters and lion's mane. Fruiting sits in the 16 to 18 degree range, with brown handling the upper end and short warm spells better than white.
